  • peppers
  • 2 sweet long Italien peppers
  • 1/2 tsp olive oil
  • 100 grams very mature Gouda, Cheddar or Tallegio cheese
  • 2 slice rustic or white bread
  • pesto
  • 1/2 large lime, Juice only
  • 1 whole garlic clove.
  • 3 anchovy filets in oil
  • 1/2 dried chilli, seeds removed
  • 30 grams peeled walnuts
  • 3 top sprigs of fresh basil
  • 1 1/2 tbsp olive oil
  • drizzle
  • 1 tbsp of pomegranate syrup or balsamic vinegar for drizzle

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Sig's Sweet Pepper Griddle in your home by yourself.

    Step 1
  • Heat a large griddle pan and set on high heat. Cut the peppers in half so that you can fill them and remove the seeds
  • Step 2
  • Brush peppers from both sides with olive oil, place cut side down into griddle pan and cook for about 4-6 minutes until they start to slightly soften
  • Step 3
  • Turn over and add the sliced cheese into each half
  • Step 4
  • Cook until the cheese has melted, make sure that the pepper is softened but not burned to much . The skin will char
  • Step 5
  • Whilst the are cooking make your white pesto by adding all pesto ingredients into a blender. Blend until they are a rough paste
  • Step 6
  • When the cheese is melted put your pan under a grill or broiler for a few minutes to brown of the cheese . Do not put the handle underneath
  • Step 7
  • Arrange your peppers , two per person on a plate, add the pesto and drizzle with the pomegranate syrup or balsamic vinegar , serve with bread
