  • 240 grams Atsuage
  • 140 grams Green beans
  • 300 ml ★Dashi stock
  • 2 tbsp ★Sugar
  • 1 1/2 tbsp ★Soy sauce

How to Make Simmered Atsuage and Green Beans

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Simmered Atsuage and Green Beans in your home by yourself.

    Step 1
  • Cut off the ends off the green beans, the cut them into 3 even lengths. Cut the atsuage into bite-sized pieces, and pour over boiling water to drain the excess oil.
  • Step 2
  • Add all the ★ ingredients into a pot, and bring to a boil, then add in the Step 1 ingredients. Bring to a boil again. Place a small, light lid that sits right on top of the food (otoshibuta) and simmer for 10 minutes over medium heat.
  • Step 3
  • Remove the small lid, and continue simmering for about 5 minutes over low heat. Please be careful not to evaporate the broth completely. And you're done.
  • Step 4
  • This is 'Ganmodoki' (small deep-fried fritters made of tofu and various ingredients) & Green Beans. This is also delicious.
