Ingredients: Skillet Enchiladas

  • 1 tbsp vegetable oil
  • 12 corn tortillas
  • 1 small yellow onion, diced
  • 1 lb ground beef
  • 1 Salt and pepper (to taste)
  • 1 can (28oz) red enchilada sauce
  • 1 can black olives
  • 2 cup shredded cheese
  • 1 sour cream for topping

How to Make Skillet Enchiladas

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Skillet Enchiladas in your home by yourself.

    Step 1
  • Cut a dozen corn tortillas into bite size pieces.
  • Step 2
  • Heat vegetable oil in skillet on med high heat and pan fry tortillas until slightly toasted and lightly crispy.
  • Step 3
  • Remove from pan and brown onions and ground beef in same skillet, seasoning ground beef to taste, until ground beef is completely cooked and onions are softened.
  • Step 4
  • Add large can of enchilada sauce and simmer for a few minutes.
  • Step 5
  • Then add tortillas back into pan and stir.
  • Step 6
  • Top with black olives, shredded cheese and sour cream.
