  • 8 red potatoes
  • 2 tbsp extra virgin olive oil
  • 2 tbsp Italian seasoning
  • 1/2 tsp cayenne
  • 2 clove garlic
  • 1 salt and pepper to taste
  • 1 lb ground beef
  • 1/4 cup ketchup
  • 1/4 cup bread crumbs
  • 1 egg
  • 1/4 cup brown sugar
  • 3 vidalia onions (or 3 small sweet onions)
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 oregano
  • 1/2 tsp basil
  • 1/2 tsp garlic
  • 1 bay leaf
  • 1/4 cup red wine
  • 1/2 cup shredded cheddar cheese

How to Make Skillet Meatloaf & Potatoes

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Skillet Meatloaf & Potatoes in your home by yourself.

    Step 1
  • Cube potatoes into bite-size pieces. In a medium bowl, mix potatoes with olive oil, italian seasoning, cayenne, garlic cloves, and a pinch of salt. Cook in a large skillet on medium heat while preparing other ingredients. Cook 10 minutes before browning meat.
  • Step 2
  • Brown beef in a large skillet.
  • Step 3
  • Add ketchup, bread crumbs, egg, brown sugar, 1 onion (diced), thyme, rosemary, oregano, basil, garlic powder, and bay leaf. Stir and let cook about 5 minutes.
  • Step 4
  • Quarter the remaining onions and add to the pan with potatoes. Add more extra virgin olive oil if necessary.
  • Step 5
  • Add red wine to the beef mixture, and cook about 1 minute; combine beef with the potatoes, and add salt and pepper to taste. Remove from heat and discard the bay leaf. Stir in cheese until slightly melted. Serve over french bread.
