Ingredients: Skunks gumbo

  • gumbo but minus the rice
  • 1 1/2 lb sausage, I used four star from Georgia
  • 12 oz shrimp deviened tail off
  • 7 oz crab meat, looked over for shell pieces
  • 2 tsp cayenne pepper powder
  • 1 large bell pepper, chopped coarsely
  • 1 large onion, chopped coarsely
  • 1 can tomato sauce (15 ounces)
  • 2 can okra and tomatoes, I used Gloria Harvest (15 ounces each)
  • 2 tbsp file
  • 2 tbsp minced garlic
  • 2 tbsp salt
  • 2 bay leaves (laurel leaves)
  • 2 tbsp ground black pepper
  • 1/3 cup all purpose flour
  • 3 cup water
  • 2 stalks celery chopped 3/8 (9mm) in length
  • 1/2 cup bacon fat rendered
  • 1/2 stick butter (2 ounces)
  • 2 tbsp worchestershire sauce
  • 2 tbsp white distilled vinegar
  • rice
  • 5 cups long grain rice
  • 1 1/2 quart water
  • 2 tbsp cayenne pepper powder
  • 2 tsp salt
  • 2 tbsp ground black pepper
  • 1 can chicken broth or beef your choice (15 ounces)
  • 1/2 stick butter

How to Make Skunks gumbo

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Skunks gumbo in your home by yourself.

    Step 1
  • Bring spices for rice to boil in water, butter and broth. Add rice, stir well and let boil till liquids are just above the top of rice. Stir good, let boil till liquids are bubbling out from craters in the rice. Cover, remove from heat. Do not remove the lid minimun 20 minutes
  • Step 2
  • Heat bacon fat butter in pan add sausage, onions, pepper, and celery let cook till it starts to sweat. Add flour.
  • Step 3
  • Let cook for 4 minutes. Add okra and tomatoes, and spices. Add water, bay leaves, add rest of ingredients
  • Step 4
  • Let cook, stirring occasionally, for 20 minutes. Add rice, cover for 30 minutes.
