  • 5 lb beef brisket
  • rub
  • 1 tbsp brown sugar
  • 1 tbsp white pepper
  • 1 tbsp salt
  • 1 tbsp worchestershire
  • 1 tbsp olive oil
  • glaze
  • 1 large jalapeño (with seeds very finely diced)
  • 1 small onion (very finely diced)
  • 2 tbsp ancho chili powder
  • 2 tbsp cocoa powder
  • 1 tsp minced garlic
  • 2 tbsp Worcestershire
  • 3 tbsp agave nectar (im sure honey would work as well)

If you have prepared the ingredients needed, now time to start cooking. There are 10 steps you must follow to make smoked brisket w/ cocoa and chili in your home by yourself.

    Step 1
  • mix together the oil and Worcestershire and spread onto brisket. then rub the mixed together rub ingredients evenly over meat.
  • Step 2
  • let marinade while setting grill up for indirect heat. soak wood chips. prepare coals for low heat
  • Step 3
  • when coals are ready and wood chips soaked, put handful of wood chips directly on coals. add meat to grill
  • Step 4
  • add wood chips every 15 to 20 minutes for an hour an a half
  • Step 5
  • mix together ingredients for glaze (I added the left over rub ingredients to mine as well). glaze brisket, and flip it, them glaze that side as well
  • Step 6
  • add coals as needed for heat, and keep adding wood chips every 15 to 20 minutes for another hour
  • Step 7
  • preheat oven to 285 and reglaze brisket
  • Step 8
  • when oven is ready, transfer from grill to oven
  • Step 9
  • cook for another hour and a half or until meat has reached internal temp of 175, glazing one more time with any remaining glaze in the middle (I placed mine directly on rack with a pan on the rack beneath it)
  • Step 10
  • remove from oven and wrap in tin foil for 10 to 15 minutes before serving.
