  • Marinade
  • 2 cup Pineapple juice
  • 1 cup Soy sauce
  • 1 cup Molasses
  • 1/4 cup Spiced rum
  • 2 tbsp Lemon juice
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Powdered ginger
  • 1/2 tsp Nutmeg
  • 1/4 tsp Ground allspice

How to Make Smoked Caribbean Chicken

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Smoked Caribbean Chicken in your home by yourself.

    Step 1
  • Mix the ingredients of the marinade and marinate the chicken overnight.
  • Step 2
  • Set up your grill for Indirect Heat with a drip pan in the middle.
  • Step 3
  • Place chicken on the grill over the drip pan and add wet apple wood chips directly to the hot coals. Cook for about one hour and 15 minutes to an hour and 30 minutes. Maintaining a temperature of about 350F°.
  • Step 4
  • When chicken reaches an internal temperature of 170F° remove from grill and let rest for about 10 minutes before serving.
