  • Bone in Beef roast (any cut or size you like)
  • 12 oz Beef Broth (or more)
  • *** Italian rub**
  • 2 TBSP oregano, dried crushed
  • 1 TBSP basil, dried crushed
  • 1 TBSP marjoram, dried crushed
  • 2 tsp Lawery's season salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp paprika
  • 1 tsp black pepper

How to Make Smoked Italian Beef

If you have prepared the ingredients needed, now time to start cooking. There are 12 steps you must follow to make Smoked Italian Beef in your home by yourself.

    Step 1
  • Crush up dried herbs as much as possible and mix rub ingredients and set aside until needed.
  • Step 2
  • Season beef roast "generously" with the rub. Wrap in plastic wrap and refrigerate 24 to 48 hours, flipping several times.
  • Step 3
  • Set up your grill for Indirect Heat with unlit charcoal.
  • Step 4
  • Add hot charcoal from a chimney starter (1/2 full)
  • Step 5
  • Place a drip pan in the middle and add water.
  • Step 6
  • Place roast on the grill over the drip pan and add wet hickory wood chips directly to the hot coals. Smoke at about 325°F to 350°F.
  • Step 7
  • Smoke for an hour to an hour and a half. Add more hickory wood as needed.
  • Step 8
  • Place roast in a clean disposable drip pan and add the beef broth.
  • Step 9
  • Cook for about 30 minutes and flip the roast over in the broth. Continue cooking for an hour or longer until the roast falls apart. Add more charcoal as needed.
  • Step 10
  • Remove the pan from the grill and gently transfer the roast to a cutting board. Shred beef removing any fat and the bone. Return shredded beef into the broth.
  • Step 11
  • Serve on toasted hoagie rolls with pepperoncini peppers on the side.
  • Step 12
  • You can add the shredded beef and the broth to a slow cooker to keep warm if being served at a party. You can serve on small buns for "Smoked Italian Beef Sliders".
