Ingredients: Sofrito

  • 1 Yellow or Red Onion
  • 1 Green Pepper
  • 1 Red Bell Pepper
  • 1 Red, Yellow and Orange Sweet Peppers
  • 1 Garlic
  • 1 Cilantro
  • 1 Culantro (Coriander)
  • 1 pinch Salt

How to Make Sofrito

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Sofrito in your home by yourself.

    Step 1
  • AMOUNT OF INGREDIENTS DEPENDS ON HOW MUCH YOU WANT TO MAKE.
  • Step 2
  • Rinse vegetables thoroughly and cut in large chunks.
  • Step 3
  • Add everything to blender and blend until smooth. If you don't have a blender, dice all veggies in small pieces and add everything to a pan on medium heat with a little EVOO and sautee until onions are translucent and veggies are soft. Make sure not to over cook, remember it will cook even more when you use it later.
  • Step 4
  • If you're using a blender and prefer a thicker consistency like I do, there's no need to add water or olive oil, the vegetables have enough. But you can add liquid if you prefer a smoother consistency.
  • Step 5
  • Keep a weeks amount in a closed container in the fridge. Store the rest (up to 2 months or more) in a tighly seeled plastic container in the freezer and use as needed.
  • Step 6
  • Make sure you wash your blender 2-3 times with SOAP and HOT water because nobody wants garlic and onion milkshakes if you know what I mean ;-)
