  • 2 medium sized cold baked potatoes (a bit smaller than a normal jacket potato).
  • 4 tbsp creme fraiche (I actually used Lake District quark, it's creamier and cheesier)
  • 1/2 tsp garlic powder
  • 1/2 a small onion, chopped
  • 40 grams grated or crumbled cheddar cheese
  • 50 grams thick cut ham, chopped into small chunks (out chopped cooked bacon if you prefer)
  • 1 salt and pepper to taste

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Sophie's ham and cheese potato skins in your home by yourself.

    Step 1
  • Preheat oven to 180°C.
  • Step 2
  • Cut potatoes in half length ways, and scoop out the middle of the potatoes, taking care not to pierce the skin.

  • In a bowl, add the potatoes insides, and all the other ingredients (except your ham).
  • Step 4
  • Use a hand blender to mix until creamy and smooth.
  • Step 5
  • Using a spoon, mix in your ham.
  • Step 6
  • Spoon the mixture back into the skins.
  • Step 7
  • Bake in the oven for 15-20 mins.
  • Step 8
  • NB: you may wish to top your skins with cheese - I prefer not to, but it's up to you!
