Ingredients: Southwest chicken and rice

  • 2 chicken breasts
  • 10 1/2 Oz can Cream of mushroom
  • 10 1/2 Oz can Cream of chicken
  • 1/2 cup milk
  • 10 1/2 Oz can black beans
  • 10 1/2 Oz can sweet corn
  • 10 1/2 Oz can Rotel with green chilies
  • 1 1/2 cups rice
  • 2 cups shredded cheese
  • Taco seasoning mix
  • 1 tsp seasoned salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 32 Oz. chicken broth

How to Make Southwest chicken and rice

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Southwest chicken and rice in your home by yourself.

    Step 1
  • Boil chicken in chicken broth. Can add water if needed.
  • Step 2
  • When chicken is done drain and shred. Set aside
  • Step 3
  • While chicken is cooking drain and rinse black beans, corn and rotel then set aside
  • Step 4
  • In separate pan combine cream of chicken, cream of mushroom. Stir and add milk until creamy.
  • Step 5
  • Add corn, rotel and black beans to soup mixture. May need to add more milk
  • Step 6
  • Add shredded chicken and Taco seasoning.
  • Step 7
  • Cook rice as directed
  • Step 8
  • When rice is done add rice and shredded cheese to mixture and enjoy.
