  • 4 pack of smoked sausage (I used a Jalapeño blend)
  • 1 lb red potatoes
  • 1/2 green bell pepper
  • 1/2 orange bell pepper
  • 1/4 yellow onion
  • 2 tbsp chopped chives
  • 2 tbsp extra virgin olive oil
  • 1 salt, pepper, garlic powder to taste
  • 1 tbsp red chili powder

How to Make Southwest Sausage Skillet

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Southwest Sausage Skillet in your home by yourself.

    Step 1
  • Cut potatoes in half then quarters.
  • Step 2
  • In a food safe plastic bag add potatoes, 1 Tbsp olive oil, and red chili powder. Shake bag well until potatoes are evenly covered.
  • Step 3
  • Preheat oven to 375° F
  • Step 4
  • In a heated sauté pan, add potatoes and sauté on medium high until potatoes become crisp.
  • Step 5
  • Place potatoes in a shallow aluminum foil lined baking sheet and bake for about 15 minutes or until potatoes are softened to your liking.
  • Step 6
  • Meanwhile arange sliced sausage in the sauté pan with remaining oil and fry until golden, flip and repeat.
  • Step 7
  • Add peppers, onion, and salt & pepper. Sauté until onion is translucent.
  • Step 8
  • Return potatoes to pan and toss with chives and garlic powder for about a minute.
  • Step 9
  • Enjoy as an easy dinner, and leftovers are great in the morning topped with eggs and cheese.
