  • 12 oz Spaghetti noodles
  • 4 slice chopped bacon
  • 3/4 cup halved grape/cherry tomatoes
  • 1 or 2 tablespoons minced garlic
  • 1 cup chopped broccoli(optional )
  • 2 eggs
  • 1/2 cup grated parmesan cheese
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup chopped basil
  • chopped parsley
  • olive oil
  • salt and pepper

How to Make Spaghetti carbonara caprese

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Spaghetti carbonara caprese in your home by yourself.

    Step 1
  • Bring a pot of salted water to a boil. Cook pasta according to package directions.
  • Step 2
  • I always blanch my broccoli in the pasta water in the last few minutes of cooking. Reserve a cup of pasta water. Set aside.
  • Step 3
  • Heat large sauté or frying pan to medium/medium high. Splash with olive oil if desired. Cook bacon to your preference. Drain the grease if desired (I don't).
  • Step 4
  • Beat eggs with parmesan cheese in separate dish. Add salt and pepper if desired.
  • Step 5
  • Add tomatoes to bacon and let cook for a few minutes in bacon grease. Add garlic. Remove from heat when garlic becomes fragrant (approximately 1 minute).
  • Step 6
  • Add pasta, broccoli, and egg mixture to sauté pan and stir quickly to distribute and cook the eggs without scrambling them.
  • Step 7
  • If pasta seems too dry, add reserved pasta water slowly until desired consistency is reached.
  • Step 8
  • Add mozzarella and basil and toss to combine.
  • Step 9
  • Garnish with parsley and more parmesan if you choose.
