Ingredients: Spaghetti Veganese

  • 350 g Pasta
  • 1 can roasted Eggplant
  • 1 can pomodori (tomatos in juice)
  • 4 gloves of garlic
  • 3 hands of walnuts
  • 2 hands of pinenuts
  • 4-5 tsp. Ras El Hanout (or self-made)
  • salt
  • olive oil or grapeseed oil
  • chili

How to Make Spaghetti Veganese

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Spaghetti Veganese in your home by yourself.

    Step 1
  • Crush nuts with 2 gloves of garlic, so that you still have chunks and add Ras El Hanout. Fill in oil to get a nice mushy texture (not liquidy) (set water for pasta to boil)
  • Step 2
  • Fry and stir the nut-mix in a hot pan for 1-2 minutes, lower the temperature to a medium-low level and keep stirring for another 3-4 minutes.
  • Step 3
  • Add tomatos, last gloves of garlic and let fry for 10 minutes. (Cook the pasta) Add the Eggplant and keep cooking for another 10-15 minutes.
  • Step 4
  • Serve with some freh Koriander
