  • 6 medium to large potatoes, skin on coarsely chopped
  • 1 whole fresh lemon
  • 1 preserved salted lemon (Use another fresh lemon instead if you don't have preserved lemons)
  • water
  • garlic salt
  • 1 large chicken, can also use pieces
  • 200 grams chorizo, sliced
  • olive oil, extra virgin
  • 3 garlic cloves coursely chopped
  • 1 large onion, cut into large pieces
  • cracked black pepper

How to Make Spanish chicken and Chorizo

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Spanish chicken and Chorizo in your home by yourself.

    Step 1
  • Preheat oven to 220 c.
  • Step 2
  • In a large pot add the potatoes, water, fresh lemon (prick with a knife a few times) and garlic salt and bring to the boil for 5 minutes.
  • Step 3
  • In a tray add some olive oil and heat in the oven.
  • Step 4
  • Drain well the potatoes when done.
  • Step 5
  • Next prepare your chicken. Stuff the chicken with the preserved lemon, fresh lemon and a handful of chorizo. Then rub with some olive oil and garlic salt.
  • Step 6
  • Then layer the potatoes in tray, sprinkle with salt, add the onions and garlic and top with the chicken, and chorizo pieces. Sprinkle with some cracked black pepper.
  • Step 7
  • Transfer to the oven.
  • Step 8
  • Bake for 1 hour and 20 minutes or until fully cooked through.
  • Step 9
  • Remove the chicken and let it rest, continue to cook the potatoes until they crisp up. About another 20 minutes or so.
