  • 900 g skinless chicken thighs and/or drumsticks
  • 1 onion, minced
  • 1 large carrot, cut in bite-sized pieces
  • 1 large potato, cubed
  • 2 large tomatoes, chopped
  • 4 cloves garlic, minced
  • 2 zucchini, sliced
  • 2 Tbsp tomato paste
  • 2 handfuls coriander leaves, chopped
  • 2 Tbsp cooking oil
  • Spices:
  • 1 Tbsp ground coriander
  • 2 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/4 tsp ground cardamom
  • 1/4 tsp cinnamon
  • to taste salt

How to Make Spiced Chicken and Vegetable Stew

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Spiced Chicken and Vegetable Stew in your home by yourself.

    Step 1
  • Heat oil in a large pot. Saute the onion until it starts to brown a little. Add the chicken and cook each piece so it's browned on both sides.
  • Step 2
  • Add potatoes and carrots. Cook for a few minutes while stirring. Add the tomatoes and cook for another few minutes while stirring. Cover the pot and continue to cook on medium for 5-6 minutes, stirring occasionally.
  • Step 3
  • Add in the garlic and all the spices. Mix well with other ingredients. Add the zucchini, tomato paste, and a little salt and mix in.
  • Step 4
  • Pour in enough water to just cover everything. Bring to a boil, turn to low and let simmer for 45-50 minutes until every thing is well cooked and the stew has thickened.
  • Step 5
  • Just before serving, stir in the chopped coriander. Enjoy with basmati rice or bread :)
