  • 2 cup low sodium vegetable or chicken stock
  • 2 cans rinsed black beans

  • In large stock pot add vegetable oil and diced onion. Over medium heat cook until softened. Add in spices, stock and rinsed black beans, cook for 20 minutes. Using a blender blend up as much of the black beans to create a paste. You can leave some beans to add more solid texture. I like mine smooth cause I use it for mexican bowls and bean burritos.
