  • 1 cup quinoa
  • 1 medium red bell pepper, diced
  • 1 can black beans, drained
  • 1 can diced tomatoes with jalapeños
  • 1/2 can sweet white corn, drained
  • 1 tsp cilantro, dried
  • 2 clove garlic, minced
  • 1 packages McCormick hot taco seasoning mix
  • 1/3 cup sour cream
  • 1/4 cup grated cheese

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Spicy veggie & quinoa salad in your home by yourself.

    Step 1
  • Rinse and cook quinoa as directed on packacge.
  • Step 2
  • In large skillet, combine all other ingredients (excluding cheese and sour cream for topping). Bring to a boil. Then reduce heat and cover, stir occasionally.

  • When quinoa is done, fluff with fork, place a serving size on plate and smother with vegetables. Top with grated cheese and sour cream, enjoy alone or with tortilla chips!
