  • 2 pie crust for 9" pie, freshly made or store bought
  • 8 oz softened cream cheese
  • 2 large eggs, beaten
  • 1 green onion finely chopped
  • 3 oz asiago cheese, grated
  • 8 slice cooked bacon, crumbled
  • 1 cup thawed frozen spinach squeezed of liquids
  • 1 tsp garlic powder
  • 1 salt and pepper to taste
  • 1/4 cup all purpose flour

    Step 1
  • Preheat oven to 425°F.
  • Step 2
  • Roll out pie crust to 1/8" thick. Cut 16 , 3 1/2" circles.

  • Place each circle of crust into muffin tin and press all around to fit.
  • Step 4
  • In a bowl beat cream cheese until smooth, add in eggs, spinach, onion, bacon, salt , pepper and garlic and flour. Mix together.
  • Step 5
  • Divide batter amongst muffin cups and top each with a sprinkle of cheese.
  • Step 6
  • Bake 11-15 minutes.
  • Step 7
  • Best enjoyed warm!
