  • 150 ml Vegetable juice (I used store-bought juice)
  • 200 grams Pancake mix
  • 1 Egg

    Step 1
  • Heat up the steamer. Put aluminium (or paper) cupcake liners in the cupcake mould.
  • Step 2
  • Beat the egg in a bowl, add the vegetable juice and mix.
  • Step 3
  • Add the pancake mix and cut and fold it in with a rubber spatula.
  • Step 4
  • Pour the mixture into the cupcake mould until about 70% full.
  • Step 5
  • Place into the steamer and steam for 10 - 15 minutes. When a skewer poked through the middle comes out clean, they are done.
  • Step 6
  • These are mildly sweet and contain a lot of vegetable juice, so you can have them for breakfast or lunch. They are great for kids' meals or snacks! My son loves them.
  • Step 7
  • You can keep these in the freezer, so make a lot, wrap each one individually, and put in the freezer. Let them defrost at room temperature when you want to eat them.
