  • For the cookie base
  • 100 grams Plain biscuits (cookies)
  • 50 grams Butter
  • For the cheesecake batter:
  • 100 grams Cream cheese
  • 100 grams Heavy cream
  • 80 grams Plain yogurt
  • 60 grams Granulated sugar
  • 10 grams Lemon juice
  • 3 grams Gelatin
  • 15 grams Water
  • For the strawberry mousse
  • 100 grams Strawberries
  • 100 grams Heavy cream
  • 30 grams Granulated sugar
  • 5 grams Lemon juice
  • 5 grams Strawberry liqueur
  • 2 grams Gelatin
  • 10 grams Water

How to Make Strawberry Mousse and No-bake Cheesecake

If you have prepared the ingredients needed, now time to start cooking. There are 14 steps you must follow to make Strawberry Mousse and No-bake Cheesecake in your home by yourself.

    Step 1
  • Cover the bottoms of the plastic cake molds with aluminium foil. Put butter in a bowl and melt in the microwave.
  • Step 2
  • Put the cookies in a plastic bag and crush. Add the crushed cookies into the bowl with the melted butter and mix.
  • Step 3
  • Line the bottoms of the plastic circles with the cookie mix and press down with a spoon or with your fingers. If you add a generous amount to each circle, you should have enough for 8.
  • Step 4
  • Put cream in a bowl, whip until it has thickened, and chill in the refrigerator. Soften gelatin in water in another bowl, and dissolve in a bain marie.
  • Step 5
  • In another bowl, mix cream cheese, granulated sugar and lemon juice together standing in a bain marie.
  • Step 6
  • Take the bowl from Step 5 off the bain marie. Add yogurt, gelatin and the whipped cream from Step 4 in that order, mixing between additions.
  • Step 7
  • Pour the mixture into the cookie-crust lined molds. Level the surface with a spoon and chill in the refrigerator.
  • Step 8
  • Make the strawberry mousse. Put the cream in a bowl and whip until thickened. Soften the gelatin in water in another bowl, and dissolve in a bain marie.
  • Step 9
  • In another bowl, crush the strawberries using a whisk. Add lemon juice, granulated sugar and strawberry liqueur. Microwave for 30 seconds.
  • Step 10
  • Add the dissolved gelatin from Step 9 and the whipped cream from Step 8, and mix rapidly.
  • Step 11
  • Pour the mixture on top of the chilled molds from Step 7 using a spoon. Level the tops and put back in the refrigerator.
  • Step 12
  • When they have set, they are done. I used store bought strawberry sauce for these. Decorate with fruits of your choice.
  • Step 13
  • I made these in oval shaped molds.
  • Step 14
  • For the jello layer on top, refer toand the red jello for the orange cheese mousse.
