Ingredients: Strawberry Rhubarb Pie

  • Crust:
  • 2 cups AP flour
  • 1 tsp salt
  • 2/3 cup softened unsalted butter
  • 1/2 cup ice cold water
  • Filling:
  • 3 eggs
  • 3 Tbsp orange juice
  • 1 1/2 cups sugar
  • 1/4 cup AP flour
  • 1 tsp nutmeg
  • 3 cups chopped rhubarb
  • 1 cup strawberries
  • 1 Tbsp unsalted butter

How to Make Strawberry Rhubarb Pie

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Strawberry Rhubarb Pie in your home by yourself.

    Step 1
  • For crust: mix dry ingredients with a pastry blender, add butter and mix til crumbly, add water and mix until just combine (careful not to over mix or crust will be tough). Divide in half, and roll out half on a well floured surface. Place into 9" pie dish.
  • Step 2
  • Combine all ingredients for filling and pour into bottom crust.
  • Step 3
  • Roll out remaining dough and top pie. Trim off excess dough about an inch from edge. Tuck and flute edges. Make several slits in top crust for vents.
  • Step 4
  • Place pie dish on a parchment lined baking sheet in case of bubble-over.
  • Step 5
  • Bake for 60-70 minutes or until top crust is golden. (I made this one for my brother-in-law's birthday, hence the initials lol)
  • Step 6
  • Preheat oven 400°
