  • 1 box Uncle Ben's rice of your choice (I like wild)
  • 1 each small onion, diced
  • 1/2 cup mushrooms, chopped
  • 1 can diced tomatoes
  • 1 lb ground beef
  • 1 salt (to taste)
  • 1 black pepper (to taste)
  • 6 quart water
  • 1/2 stick butter
  • 1 1/2 cup shredded cheese of your choice

  • Preheat oven to 400°
  • Step 2
  • Hollow out bellpepper by either cutting off top or slice length-wise and then deseed (I recommend slicing length-wise for better serving portions)

  • Remove bellpeppers and shock in an ice bath

  • Saute onion and mushrooms in butter

  • Step 8
  • Mix onion, mushrooms, rice, ground beef, and tomato together in a bowl while hot with 1/2 cup cheese
  • Step 9
  • Stuff bellpeppers with mix and top with remaining cheese.

  • Place in oven for 10-12 minutes (until cheese is melted throughly
