  • 4 slice Proscuitto
  • 1 tbsp Minced Garlic
  • 2 cup Oil for frying
  • 1 cup Panko Bread Crumbs
  • 1 Egg, beaten

    Step 1
  • Preheat oil in shallow pan for frying, to 350°.
  • Step 2
  • Finely chop Proscuitto in food processor and then place in a small mixing bowl.
  • Step 3
  • Combine cream cheese, ricotta and garlic in food processor and pulse until smooth.
  • Step 4
  • Combine cheese mixture with proscuitto.
  • Step 5
  • Rinse olives of any brine and pat dry.
  • Step 6
  • Place cheese/proscuitto stuffing in a piping bag and stuff the olives.
  • Step 7
  • Roll stuffed olives in a beaten egg and then dredge in panko.
  • Step 8
  • Drop olives into oil for 2-3 minutes or until golden. Drain on paper towels.
  • Step 9
  • Serve topped with freshly grated parmesan cheese.
