Ingredients: Stuffed Pepper Casserole

  • 1 cup rice
  • 2 cup salted water
  • 1 1/2 lb ground beef
  • 1 tbsp olive oil
  • 3 green peppers - diced
  • 1 medium onion - diced
  • 48 oz seasoned tomato sauce ( 2 - 24 oz cans - i use a onion garlic sauce )
  • 1 14.5 oz can petite diced tomatoes, undrained
  • 1 tbsp parsley
  • 1 tsp salt
  • 1 tsp basil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1 1/2 cup marble jack / colby jack shredded cheese

How to Make Stuffed Pepper Casserole

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Stuffed Pepper Casserole in your home by yourself.

    Step 1
  • Preheat oven to 350°
  • Step 2
  • Combine rice and water & cook to your preference / bag instructions. Set aside when finished.
  • Step 3
  • In a LARGE skillet brown ground beef. Drain. Remove from skillet, set aside.
  • Step 4
  • In same skillet - saute onion and peppers with olive oil over medium heat for 10 - 15 minutes or until peppers start to become tender. Peppers don't have to be completely tender at this point.
  • Step 5
  • Stir meat and all remaining ingredients into skillet EXCEPT rice.
  • Step 6
  • Mix well - let everything simmer for a few minutes stirring often.
  • Step 7
  • Mix rice in.
  • Step 8
  • Pour mixture into a greased 9x13 baking dish. Bake for 30 minutes. Remove dish from oven and sprinkle top of casserole with shredded cheese. Bake for another 5 minutes.
  • Step 9
  • Let casserole rest for 10 minutes before cutting / serving. Enjoy : )
