  • 1 lb Ground turkey
  • 1 15 oz can tomato sauce
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 small onion
  • 2 can diced tomatoes (I used Hunt's cans of basil, garlic, and oregano seasoned diced tomatoes)
  • 1 cup brown or white rice (I used brown)
  • 1 14 oz can of beef broth
  • 1/2 tsp dried basil
  • 1/4 tsp oregano flakes
  • 1 tbsp dried parsley
  • 1 to 2 cups of water

How to Make Stuffed Pepper Soup

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Stuffed Pepper Soup in your home by yourself.

    Step 1
  • Brown and season the ground turkey with salt and pepper. Put in crock pot when finished.
  • Step 2
  • Seed and dice both of the peppers and the onion. Add to the crock pot.
  • Step 3
  • Add both cans of diced tomatoes, tomato sauce, and beef broth to the crock pot.
  • Step 4
  • Add the rice, oregano, basil, and parsley to the crock pot.
  • Step 5
  • Mix everything thoroughly.
  • Step 6
  • Cook on HIGH 4-6 hours.
  • Step 7
  • Add water (or more broth!) to the soup while it is cooking and thickening if you would like a runnier soup. (The rice will really expand and suck up a lot of liquid!)
