Ingredients: Stuffed Pepper with Goats Cheese

  • 1 Pepper (any colour)
  • 75 g Goats cheese
  • 50 g boiled rice
  • 1 clove garlic
  • 1/2 onion
  • 1 tablespoon coriander
  • 1/2 tin chopped tomatoes
  • Salt and pepper
  • Olive oil to fry and brush peppers

  • Cut Pepper in half, brush with olive oil and bake in the oven at 200 °C for 15 mins or until starting to colour

  • While pepper is cooking chop the onion and garlic and fry with a little oil for 5 mins
  • Step 4
  • Add the tinned tomatoes to the onion and garlic and cook for another 5 mins on a medium heat
  • Step 5
  • Add the cooked boiled rice, coriander, pinch of salt and pepper and cook for a further 2 mins
  • Step 6
  • Spoon the mix into the pepper halves and top with the goats cheese. Cook for a further 15 mins at 200°c or until the cheese starts to colour and melt
