  • 1 bag frozen super sweet corn
  • 1 red onion
  • 1/2 red bell pepper; small dice
  • 1/2 yellow bell pepper; small dice
  • 1/2 green bell pepper; small dice
  • 1 clove garlic; minced
  • 1 stick butter
  • 1/3 cup apple cider vinegar
  • 1 tsp cayenne pepper
  • 1 large pinch sugar
  • 1 pinch kosher salt
  • 1 pinch cracked black pepper
  • 1 EVOO; as needed

How to Make Sufferin' Succotash

If you have prepared the ingredients needed, now time to start cooking. There are 2 steps you must follow to make Sufferin' Succotash in your home by yourself.

    Step 1
  • Thaw frozen corn. Slowly melt 3/4 butter til browned. Add peppers and onions. Add enough oil to coat if necessary. Add garlic when veggies are nearly caramelized. Add corn and remaining butter. Toss.
  • Step 2
  • Add vinegar, sugar, and spices. Toss. Reduce vinegar until evaporated.
