  • 12 small summer squash, sliced
  • 1/2 cup onion, diced
  • 2 can cream of celery
  • 16 oz sour cream
  • 4 cup dry herb stuffing
  • 1 salt and pepper
  • 2 cup cheddar cheese

    Step 1
  • preheat oven to 350
  • Step 2
  • place sliced squash and onion in large sauce pan then fill with water.VERY IMPORTANT to do it this way as the squash floats in water
  • Step 3
  • boil until squash is tender, 10-15mins
  • Step 4
  • drain cooked squash, then place into large bowl
  • Step 5
  • mash cooked squash mixture with potato masher or back of large spoon
  • Step 6
  • now drain squash again, and place into a greased 9x13 cake pan
  • Step 7
  • in large bowl mix cream of celery and sour cream and a little salt and pepper
  • Step 8
  • then add dry stuffing, mix to combine
  • Step 9
  • place on top of squash mixture in pan
  • Step 10
  • sprinkle with cheese
  • Step 11
  • bake at 350 uncovered for 35-45 mins
