  • 2 cup flour
  • 2 tsp pumpkin pie spice

  • 1 cup butter, softened ( 2 sticks)
  • 1 1/4 cup granulated sugar
  • 3 large eggs
  • 1 lb sweet potatoes, roasted*, peeled, and mashed
  • 1/4 cup milk
  • 1 tsp vanilla
  • other
  • 1 1/2 cup chocolate chips

How to Make Sweet Potato Muffins

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Sweet Potato Muffins in your home by yourself.

    Step 1
  • * To roast sweet potatoes: preheat oven to 425º, Place unpeeled potatoes in a shallow baking pan. Prick holes all over with a fork. Roast 50 minutes or until tender. Let cool and peel away skin
  • Step 2
  • preheat oven to 350º. Line 2 dozen muffin tins with paper muffin cups.
  • Step 3
  • in medium bowl, combine all dry ingredients. set aside
  • Step 4
  • in large bowl, beat butter with electric mixer on medium until smooth. add sugar and beat until light and fluffy. add eggs one at a time.
  • Step 5
  • add sweet potato, milk, and vanilla. beat on low until combined.
  • Step 6
  • add dry mixture to wet mixture slowly until well combined
  • Step 7
  • fold in chocolate chips to batter
  • Step 8
  • fill muffin cups 2/3 full with batter. Bake 20-30 minutes ( ovens vary).
  • Step 9
  • yields approximately 24 muffins
