  • 2 big Japanese sweet potatoes or yams (or other kind is okay too)
  • handful fresh cilantro/coriander
  • to taste black sesame seeds (optional)
  • DRESSING:
  • 1 Tbsp whole grain mustard
  • 1 tsp Dijon mustard
  • 1 Tbsp your favorite vinegar
  • 1/2 tsp sugar
  • to taste salt & pepper
  • 1 Tbsp olive oil
  • 1 Tbsp yogurt (optional - for creamier dressing)

How to Make Sweet Potato Salad with Mustard Dressing

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Sweet Potato Salad with Mustard Dressing in your home by yourself.

    Step 1
  • Scrub the skin of the sweet potatoes well and cut them into bite-sized cubes. Steam them until soft but not too mushy!
  • Step 2
  • Set the sweet potatoes aside in a colander or bowl and let them cool for 20 minutes or so. Meanwhile prepare the dressing.
  • Step 3
  • Put all the dressing ingredients into a small bowl and mix well. Adjust taste with salt, pepper and sugar if necessary. Also, chop up the cilantro/coriander.
  • Step 4
  • Once the sweet potatoes have cooled, put them in a large bowl and toss them in the dressing. Add the chopped cilantro and mix in lightly.
  • Step 5
  • I like to sprinkle on black sesame seeds to garnish because it goes nicely with the bright color of the Japanese sweet potatoes ^^
