  • 50 grams pre soak dried chili pepper
  • 20 grams sliced ginger
  • 25 grams sliced shallot
  • 20 grams spring onions
  • 300 ml vegetable oil
  • 2ND POT
  • 50 grams Chili powder
  • 15 grams Szechuan peppercorn

  • in a pot heat oil up and put ginger , dried chili , shallot and spring onion fry till golden brown then remove from heat set aside

  • in another pot lightly toast chili powder with sezechuan peppercorn till pop the off heat and pour the FIRST POT BOILING OIL and stir gently
  • Step 5
  • Keep all the ingredients in the chili oil for 3 days as it is

  • after 3 days filter the oil and it's ready to be use
