Ingredients: Thai Salmon Rice

  • Low Fat Cooking Spray
  • 1 onion, chopped
  • 2 tsp Thai 7 Spice
  • 80 grams Thai, Jasmine or Basmati Rice
  • 100 ml Light Coconut Milk
  • 300 ml Vegetable Stock
  • 150 grams Green Beans, trimmed and chopped
  • 200 grams 2 x 100g Skinless Salmon Fillets
  • To serve, a handful of coriander leaves

How to Make Thai Salmon Rice

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Thai Salmon Rice in your home by yourself.

    Step 1
  • Spray a large lidded pan with the cooking spray and heat until hot. Add the onion and cook for 2 minutes.
  • Step 2
  • Stir in the Thai 7 spice and cook for a minute before adding the rice and stirring to coat.
  • Step 3
  • Pour over the coconut milk and stock, bring to the boil, cover and simmer for 2 minutes.
  • Step 4
  • Stir in the beans and then place the salmon pieces on top of the rice. Cover and cook for 10-15 minutes until everything is cooked through.
  • Step 5
  • Serve with the coriander sprinkled on top.
