Ingredients: Tinga!

  • 3 lb chicken thighs
  • 1 packages of chorizo
  • 3 strips of bacon
  • 1/2 medium onion
  • 3 bay leaves
  • 1 small tomato
  • 2 tbsp vinegar
  • 1 small package of achiote
  • 1 salt and pepper to taste
  • 1 clove of garlic
  • 1 can chipotle chiles (I only use 2-3 chiles from the can)

How to Make Tinga!

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Tinga! in your home by yourself.

    Step 1
  • boil the chicken thighs with the garlic, onion and bay leaves until chicken is tender
  • Step 2
  • in a pan cook the strips of bacon. once cooked remove from the pan and cook the chorizo.
  • Step 3
  • shred the chicken, do not discard the water you cooked it in!
  • Step 4
  • place all of your ingredients, except the chicken, in a blender until you get a somewhat thick, reddish sauce.
  • Step 5
  • put the shredded chicken in a pot and dump the sauce over the chicken, stirring until all chicken is covered. bring to a boil.
  • Step 6
  • serve in tacos or in any way you prefer :)
