  • 3 pints cherry tomatoes cut in half
  • 2 cups sugar
  • 1 shallot minced
  • 2 cloves garlic minced
  • 1 tsp crushed red pepper flakes
  • to taste salt and pepper
  • 1/2 fresh lemon
  • tbsp olive oil
  • 3 leaves fresh basil minced or chiffonade

    Step 1
  • In a sauce pot heat up the olive oil and add your shallots and garlic and saute for about 1 min
  • Step 2
  • Then add your tomatoes, sugar, salt and pepper and crushed red pepper flakes
  • Step 3
  • Let that simmer for about ten minutes, pull off the heat and then add your chopped fresh basil and juice of half a lemon
  • Step 4
  • Chill for about an hour. This gets better as it sits and is best served chilled or room temp.
  • Step 5
  • Serve on your favorite fish, toast or even on goat cheese.
