Ingredients: Tortang Talong

  • 1 big eggplant
  • 2 whole eggs, beaten
  • 1/2 cup ground meat
  • 1 medium white onion,chopped
  • 1 medium tomato,chopped
  • 3 clove of crushed garlic
  • 1 salt to taste
  • 1 ground black pepper (if desired)
  • 1 dash of thyme
  • 1 canola oil

How to Make Tortang Talong

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Tortang Talong in your home by yourself.

    Step 1
  • Grill eggplant until the skin is burned black. Peel the burned skin. Use a fork to smash the eggplant on a plate. Set aside.
  • Step 2
  • Heat pan on medium fire and pour canola oil. Fry crushed garlic and ground meat, season with salt and ground black pepper. Pour onions and tomatoes. Simmer for a few minutes and set aside.
  • Step 3
  • Season beaten eggs with salt and whisk. Put smashed eggplant in an oval bowl and pour beaten eggs, fried ground meat with onions and tomato.
  • Step 4
  • Using the same pan, reheat on medium fire and add a little canola oil. Pour the eggplant mix.
  • Step 5
  • Season with thyme and flip when the bottom is cooked.Serve with your favorite condiments and drinks
