  • 2 cup leftover Turkey, chopped fine.
  • 2 cup of shredded pepper jack cheese
  • 1 cup of shredded extra sharp cheddar cheese
  • 1 16 ounce can of enchilada sauce red or green is fine
  • 16 oz can of chopped Ortega chilis
  • 6 tacos size flour tortillas or 12 corn tortillas your choice
  • 1 Sour cream, salsa, guacamole, chopped green onions; chopped jalapenos , optional toppings or garnish

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Turkey enchiladas! in your home by yourself.

    Step 1
  • In a large bowl combine 1 Cup shredded pepper jack cheese, the chopped turkey Ortega chiles and mix well.
  • Step 2
  • Fill your tortillas corn or flour with the turkey mixture place seam down in a baking dish.
  • Step 3
  • Once all of your tortillas are filled pour enchilada sauce over the top on the enchiladas. Top with remaining pepper jack cheese and cheddar cheese bake at 350°F for 30 minutes.
