  • 1/2 cup Brown rice, cooked
  • 1 lb lean ground turkey
  • 1 clove (large) crushed garlic
  • 1/2 Vidalia onion, sliced
  • 5 mini sweet peppers, seeded and sliced
  • 1/4 tsp oregano
  • 1/4 tsp Italian seasoning
  • 1 can (6 oz) organic tomato paste

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Unstuffed peppers (healthy) in your home by yourself.

    Step 1
  • In large skillet brown turkey, crushed and chopped garlic, and sliced onion. Add small amount of salt and pepper.
  • Step 2
  • After cooking the meat, garlic, and onion about 10 minutes add sliced peppers and cook additional 10 minutes or until turkey has browned lightly. Add oregano and Italian seasoning.
  • Step 3
  • In large measuring cup mix tomato paste and 3 cups hot water till smooth. Add to the meat mixture and cook additional hour on medium/low stirring occasionally. The liquid will decrease, more may be added if you want.
  • Step 4
  • Taste to see if salt and pepper need to be added. Serve over prepared brown rice.
