  • 1 tbsp vegetable oil
  • 1/2 lb ground beef or turkey
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 tsp dried basil leaves, crushed
  • 2 cup V8 Vegetable juice
  • 1/4 tsp garlic powder
  • 1/4 tsp salt , or to taste
  • 1/2 cup uncooked regular long-grain white rice
  • 2 medium green peppers, cut into 1 inch pieces (2 cups)

    Step 1
  • Heat the oil in a 10 inch skillet over medium heat. Add the meat, onion, and basil and cooked until the meat is browned. Stir often to separate the meat. Pour off any fat.

  • Stir the juice and rice in the skillet. Stir in garlic powder and salt. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes.
  • Step 3
  • Stir the peppers into the skillet. Cover and cook for 10 more minutes or until the rice is tender and most of the liquid is absorbed.
