  • 1 tbsp olive oil, extra virgin
  • 1/2 large onion, chopped
  • 3 clove garlic, diced
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp chili powder
  • 1 tsp Sea salt
  • 1 tsp ground black pepper
  • 28 oz crushed tomatoes
  • 2 cup vegetable stock
  • 1 cup chunky salsa
  • 4 oz mild diced green chilies
  • 2 can Black beans
  • 1 Avocado
  • 1 grated cheese

How to Make Veg. Tortilla Soup

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Veg. Tortilla Soup in your home by yourself.

    Step 1
  • Preheat a large pot over medium heat.
  • Step 2
  • Add olive oil, onion, and garlic. Cook until translucent. Turn down heat.
  • Step 3
  • Add all spices. Stir to coat. Then add tomatoes, stock, salsa, chilies and stir to combine. Bring to simmer, then add black beans. Bring to simmer for 30 minutes.
  • Step 4
