  • 1 lb hamburger, ground round or chuck
  • 1 onion, chopped
  • 2 can diced tomatoes
  • 1 can whole tomatoes
  • 1 packages frozen mixed vegetables
  • 4 potatoes, diced in small chunks or medium slices ( can use can potatoes )
  • 2 can beef broth, or 2 beef bouillon cubes
  • salt and pepper
  • celery or celery seed (optional)
  • 1 tomato juice if more liquid is needed

How to Make Vegetable Beef Soup

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Vegetable Beef Soup in your home by yourself.

    Step 1
  • Brown ground meat, celery ( if using ) and onions until browned. Stir meat to crumble it while cooking.
  • Step 2
  • When beef if fully cooked, drain off excess fat.
  • Step 3
  • Add beef and onions back to large pot of dutch oven.
  • Step 4
  • Add tomatoes, potatoes, mixed vegetables and beef broth or bouillon cubes.
  • Step 5
  • Heat on medium until slow boil, then reduce heat to low and simmer.
  • Step 6
  • I usually simmer mine an hour or so to let flavors blend, stirring occationally.
  • Step 7
  • You can add any veggies you like, and can also use fresh ones also. Good in crock pot also.
  • Step 8
  • I love this with cornbread or crackers.
  • Step 9
  • If it is not juicy enough, just add tomato juice, broth or water
