  • 1/3 cup Milk
  • 1 tbsp margarine or butter

  • 4 flour tortillas
  • 1 tbsp fajita seasoning
  • 1/2 cup salsa, medium

    Step 1
  • beat eggs and milk with fork, set aside
  • Step 2
  • in a skillet, melt margarine over medium high heat.
  • Step 3
  • cook bell pepper, onion, and seasoning in margarine for about 4 minutes , stirring occasionally , until vegetables are tender.
  • Step 4
  • removed from heat, keep warm
  • Step 5
  • reduce heat to medium, pour egg mixture into skillet . as mixture begins to set at bottom, gently life cooked portions with spatula so that thin, uncooked portions can flow to bottom.
  • Step 6
  • avoid constant stirring
  • Step 7
  • cook 3 to 4 minutes or until eggs are firm but still moist
  • Step 8
  • spoon one fourth of egg mixture onto center of each tortilla, top with vegetables.
  • Step 9
  • fold right and left sides of tortilla over mixture, overlapping. Top each fajita with salsa before serving.
