  • Peel onions, eggplant and zucchini.
  • Step 2
  • Chop eggplant and zucchini (not too small) and reserve. Sprinkle some salt and mix.

  • Put oil in a pan to fry the onions and the peppers. Chop the tomatoes and reserve.

  • Step 6
  • Add the tomatoes and stir. Season with salt and black pepper.
  • Step 7
  • (Tip) If you find it to acidic, add a bit of white sugar.
