Ingredients: Vegetarian bolognese

  • 4 medium carrots
  • 3 stick celery
  • 2 medium onions
  • 15 medium mushrooms
  • 2 tsp garlic powder
  • 2 medium tomatoes chopped
  • 1 tbsp tomato puree
  • 1 olive oil
  • 500 grams passata
  • 10 fresh basil leaves
  • 2 tsp mixed Italian herbs
  • 1 salt & pepper to taste
  • 6 rings dried tagliatelle
  • 1 grated cheese
  • 1 salt and pepper to taste

How to Make Vegetarian bolognese

If you have prepared the ingredients needed, now time to start cooking. There are 14 steps you must follow to make Vegetarian bolognese in your home by yourself.

    Step 1
  • Grate the carrots
  • Step 2
  • Finely chop onion and celery and mix with carrots and level teaspoon of garlic powder
  • Step 3
  • Fry mix in a little olive oil untill 70% cooked
  • Step 4
  • Fry mushrooms in a little olive oil (vegetable oil will do)
  • Step 5
  • Mix chopped tomatoes, puree, and level teaspoon garlic powder with a little hot water
  • Step 6
  • Add mix to mushrooms
  • Step 7
  • Add mixed herbs and mix together
  • Step 8
  • Add veg mix
  • Step 9
  • Add passata and mix and simmer for 2 hours minimum, add water as needed
  • Step 10
  • After 2 hours add choped basil leaves simmer for 1 hour
  • Step 11
  • Add salt and pepper to taste
  • Step 12
  • Boil pasta and when 75% cooked add to mix
  • Step 13
  • Mix and simmer for 5 mins stirring regularly
  • Step 14
  • Serve with grated cheese of choice and garlic bread, or in this case cheese and pear soda bread.
