  • 1 cup Jasmine/long grain rice
  • 2 cup Water
  • 1/4 cup Chopped cilantro (or as needed)
  • 1 Egg
  • Salt and Pepper

  • Bring 2 cups of water to a boil
  • Step 2
  • Once at a boil add rice. Cover and let simmer for 10-12 minutes
  • Step 3
  • With about 3 minutes left, stir in most of the cilantro and allow rice to simmer again.
  • Step 4
  • While the rice simmers crack and beat an egg, adding cilantro, pepper, and salt. Add milk (I used soy milk) and scramble
  • Step 5
  • Chop up the egg into fine bits and stir into the rice along with more salt and pepper. Add butter and stir.
  • Step 6
  • Serve immediately as a side or a dish
