  • 1 tbsp Or sake lees (to give it a fermented flavor)

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Vegetarian Soy-Milk-Based Cheese in your home by yourself.

    Step 1
  • To prepare the shiratamako, put it in a plastic bag, then press down on top with a spatula to crush the lumps. This will make it harder for lumps to form.
  • Step 2
  • Put all of the ingredients into a bowl (except for the salt, pepper, and miso/sake lees), then mix evenly.
  • Step 3
  • Simmer over low heat, stirring from time to time to prevent scalding, until it thickens.
  • Step 4
  • Add salt and pepper and miso to taste, then it's ready to be served.
  • Step 5
  • To give it a consistency like melting cheese, finely chop up 1 piece of pre-cut mochi, then simmer your mixture while stirring until the mochi melts. It will look just like cheese.
