  • 1 tbsp Olive Oil
  • 1 14.5 oz can of Organic Diced Tomatoes
  • 10 oz of fresh baby Spinach
  • 1 15 oz can of Chickpeas, rinsed and drained
  • 1 cup Vegetable broth
  • 1/4 tsp Sea Salt
  • 1/4 tsp ground pepper

How to Make Vegetarian Spinach Curry

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Vegetarian Spinach Curry in your home by yourself.

    Step 1
  • In a nonstick skillet, cook onion,garlic until brown for 3-5 minutes
  • Step 2
  • add curry,paprika,turmeric, cumin,salt and pepper. stir in mixture.
  • Step 3
  • Stir in diced tomatoes, spinach and 1 cup of chickpeas
  • Step 4
  • In a blender, combine the vegetable broth and remaining chickpeas.
  • Step 5
  • Stir mixture into skillet and heat for 10 minutes and let simmer for 5 additional minutes.
  • Step 6
  • Optional Balsamic Brown rice for side dish
