  • 1 medium onion
  • 2 clove garlic
  • 2 tbsp olive oil
  • 2 cup spinach
  • 1 medium egg
  • 2 tbsp Italian spice blend
  • 2 cup mozzarella cheese
  • 12 whole grain lasagna noodles
  • 2 cup pasta sauce
  • 2 cup frozen vegetables

How to Make Veggie Lasagna

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Veggie Lasagna in your home by yourself.

    Step 1
  • Cook whole grain lasagna noodles according to the package instructions.
  • Step 2
  • Saute the onion and garlic in oil over medium high heat. Add veggies and saute until tender. Add spices. Set aside.
  • Step 3
  • Whisk egg into 1 cup of cheese and stir in fresh spinach.
  • Step 4
  • Pour a little sauce in the bottom of a greased 9x13 pan.
  • Step 5
  • Top with 4 lasagna noodles,1/2 cup ricotta mixture, ½ of the veggies, and ¾ cup sauce. Repeat.
  • Step 6
  • Top entire pan with noodles, remaining sauce, and cheese.
  • Step 7
  • Cover with tin foil and bake for 40 minutes at 375°F. Remove foil and bake for 10 minutes more or until cheese is bubbly.
