Ingredients: Veggie (or Quinoa) Rice

  • 1 1/4 cup uncooked white rice (or Quinoa)
  • 1 3/4 cup water
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 cup zucchini squash, peeled and diced
  • 1 cup chopped mushrooms
  • 1 tbsp minced garlic
  • 2 tbsp olive oil
  • 1/2 cup grated parmesan cheese
  • 1 tsp oregano (or italian seasoning mix)
  • 1 salt & pepper to taste

How to Make Veggie (or Quinoa) Rice

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Veggie (or Quinoa) Rice in your home by yourself.

    Step 1
  • Saute veggies in olive oil till soft. (I used the insides of the zucchini for stuffed zucchini boats.)
  • Step 2
  • Add in garlic, rice or Quinoa and oregano, saute 1 minute more.
  • Step 3
  • Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed.
  • Step 4
  • Stir in Parmesan cheese and extra seasoning if desired serve.
  • Step 5
  • Enjoy as a main dish or side with fish, Pork chops, steak or chicken!
