  • 1 1/4 tbsp table margarine(low fat)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 mozzarella shredded cheese
  • 1 grated parmesan cheese
  • 8 dash italian season
  • 1 tbsp chopped chive(escallion)
  • 1/2 cup chopped green sweet pepper
  • 1 stick chopped celery
  • 8 large peeled potatoes

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Veggie soulfood delight in your home by yourself.

    Step 1
  • Boil till soft and tender carrots, potatoes, pumpkin and cassava
  • Step 2
  • Drain vegetables and place in a large bowl
  • Step 3
  • Crush vegetables together and add all ingredients except the cheese.
  • Step 4
  • Mix ingredients in bowl together adding the mozzarella and parmesan accordingly.
  • Step 5
  • Place in a greased dish half of mixture and add both types of cheese on top
  • Step 6
  • Place remaining veggie mix and added both types of cheese.
  • Step 7
  • Place in pre-heated 350°F oven and bake for 25-30minutes. Enjoy
